Paige P. Saleun

Paige Amundson Saleun was born and raised in New Orleans.  She is a graduate of Dominican High School class of 1983.  In 1984, she moved to New York City, went to Hunter College and began her extensive food and beverage management career with high end private and corporate catering and hotel and restaurant openings with New York’s celebrity clients and corporations.  In 1999, she met her husband, Jacques Saleun, while opening the Bateau New York restaurant.  He is a classically trained French chef and they married in France in 2000.  When they moved to New Orleans in 2004, they had plans to continue to California, but the New Orleans French chefs and food scene grabbed them.  In 2005, they opened Chateau du Lac Bistro in old Metairie and in 2012 a second location in the Warehouse District.  When they closed the restaurants in 2017, Paige became the office manager at Good Shepherd Parish and in 2019, she went to St. Patrick’s.  She can still be found there on the weekends as the wedding coordinator.  She joined Notre Dame Seminary June, 2023 as the Business and Finance Office Assistant.  She has 3 children, Ainsley, Antoine and Andre’.  In her spare time, she and her family and friends enjoy sailing on their boat, No Drama.
